A recipe so good Jack Johnson would sing about it…

WHAT TO GRAB:

  • 1 banana

  • 2 eggs

  • Dash of vanilla extract

  • Cinnamon or pumpkin pie spice

  • 1 tbsp chia seeds

  • 2 tbsp oats

Optional additions:

  • Coconut flakes

  • Berries

  • Nuts (chopped finely or slivered)

WHAT TO DO:

  1. Mash the banana until most of the lumps are out

  2. Add in the egg and whisk together (a fork works fine)

  3. Mix in vanilla, spices, chia seeds & oats to banana-egg mixture

  4. Heat the skillet and treat like a normal pancake!
