Baked Apples

An avid apple lover myself, I unfortunately cannot eat raw apples due to oral allergy syndrome. This means that my seasonal allergies to certain trees (birch specifically), cross pollinate with apples, so when I consume a raw apple, I get a very itchy throat and red, swollen eyes. However, when apples (or other fruits that create oral allergy syndrome) are cooked, they do not produce the same reaction. Enter my favorite fall snack - baked apples!

These can be a good breakfast with some cottage cheese or a sweet afternoon snack with some almond butter. They would also taste delicious alongside some vanilla ice cream for an apple pie vibe. No right or wrong here!

What to grab

  • 1 apple (I like honeycrisp for this)

  • Coconut oil spray

  • Cinnamon

Optional toppings

  • Greek yogurt (or plant-based yogurt) OR cottage cheese

  • Coconut shreds

  • Cacao nibs

  • Pecan pieces

  • Nut butter

What to do

  1. Set oven to 400F

  2. While oven preheats, cut apple in half and take out the seeds

  3. Spray all parts of the apple with coconut oil and dust with cinnamon

  4. Bake in the oven for ~30 minutes or until tender (will depend on the size of the apple)

  5. Once the apple is tender, take it out of the oven and let cool for 1-2 minutes

  6. Top with whatever toppings you like (pictured is Greek yogurt, coconut & cacao nibs)

  7. Enjoy!
