Blender Banana Bread

Huge banana bread girl, but so many recipes are filled with various flours & lots of sugar. This version is simple, quick & nutritious. When I am making this for a breakfast version vs. a sweet treat, I add some chia seeds & walnuts. You can adjust the sweetener (maple syrup or honey) as you want to fit your taste preferences.

WHAT TO GRAB:

  • 3 very ripe bananas (the riper, the sweeter)

  • 2 cups oats

  • 2 eggs

  • 1 tbsp coconut oil

  • 2 tbsp maple syrup or honey (can add more to make it sweeter)

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • Optional: chia seeds, chocolate chips, walnuts

WHAT TO DO:

  1. Set oven to 350F

  2. In a blender (or large food processor), add bananas, eggs, oats, coconut oil, maple syrup, cinnamon and baking powder. Process until it is a batter consistency

  3. Take off the lid and stir in any extras (nuts, chocolate chips, etc) that you wish

  4. Pour batter into baking dish (sprayed with cooking spray) & top with a few extra chocolate chips or oats to make it look pretty

  5. Baked for ~30 minutes or until done (you can test it by putting a toothpick in and it coming out clean)

  6. ENJOY :)
