Lemon Dijon Salmon
A weeknight staple filled with heart healthy omega 3s from the salmon and antioxidants from the herbs. I bake it in parchment paper to avoid the smell. If you don’t have parchment paper on hand, you can skip this step. Just light an extra candle :)

WHAT TO GRAB:
2 filets of salmon
Olive oil
Dijon mustard
Salt/pepper
Fresh herbs (parsley, dill and mint work best, but use whatever you have on hand)
Lemon, sliced thinly
Parchment paper
WHAT TO DO:
Preheat the oven to 375F
While the oven preheats, start on the salmon. Rub the salmon with a tiny bit of olive oil (really don’t need much since the salmon is fatty and rich) and dijon mustard. Add a bit of salt/pepper to each fillet. Top with fresh herbs and sliced lemon.
Place each individual filet in a piece of parchment paper and roll it up around the fish to make a little packet. Place the packets on a baking sheet and roll the extra parchment and tuck underneath so it is nicely sealed and will steam.
Bake for ~10-15 minutes (depends on the size of your salmon filet and how done you like it).
