Asian Kale Salad
what to grab:
Kale, chopped
Sesame oil
Broccoli/carrot slaw
Jicama, chopped
1 Clementine or 1/2 of an orange, cut into segments
1 scallion, chopped
~ 1/2 Avocado, cubed
~ 2 tbsp cashews, chopped
Juice of 1/2 of a lemon
Parsley
Salt/pepper
OPTIONAL:
Top with protein of your choosing: tofu, chicken, egg, etc.
what to do:
Start by placing chopped kale in a large bowl. Add sesame oil to kale and start massaging the oil into the kale. This starts to breakdown the kale a bit so it’s easier to tolerate and digest.
Once kale is massaged, add in the rest of the fresh ingredients (slaw, jicama, orange segments, scallion). Mix well.
Once mixed, add in cubed avocado and chopped cashews. Top with lemon, chopped parsley and salt/pepper to taste.
Option to top with protein of your choosing.
