Brussels Sprouts Salad

WHAT TO GRAB:

  • Brussel sprouts, shaved & roasted with avocado oil

  • Dried cherries, chopped small

  • Pistachios, shelled

  • Shaved parmesan

  • Chives, chopped

  • Rice wine vinegar

  • Olive oil

  • Salt

  • Pepper

WHAT TO DO:

  1. Start by roasting shaved brussel sprouts in avocado oil at 425 until crispy.

  2. Once brussel sprouts are done, in a large bowl add in brussel sprouts, dried cherries, shelled pistachios, parmesan shavings, chopped chives. Mix well.

  3. Top with rice wine vinegar, olive oil, salt and pepper to taste.

  4. Enjoy :)
