Burger Bowls

A simple weeknight dinner with all the burger flavors you love, just built into a bowl. They have everything you love about a classic burger — savory beef, crunchy toppings, pickles, and special sauce — layered over fresh greens with roasted sweet potato for a little sweetness and staying power. Balanced, satisfying, and very weeknight-friendly.

WHAT TO GRAB:

  • 1 medium sweet potato, diced into small cubes

  • 1 tablespoon olive oil or avocado oil

  • Salt and pepper

  • ½ teaspoon garlic powder

  • ½ teaspoon paprika

  • 1 pound ground beef

  • 1 teaspoon mustard

  • 3–4 cups chopped lettuce (romaine, iceberg, or butter lettuce)

  • 1 cup grape tomatoes, chopped

  • ¼ red onion, thinly sliced

  • ½ cup chopped pickles

  • ¼ cup banana peppers

  • Handful microgreens (optional)

  • Special Sauce of choice (I love Primal Kitchen)

WHAT TO DO:

  1. Preheat the oven to 425°F.

  2. Place the diced sweet potatoes on a sheet pan. Toss with olive oil, salt, pepper, garlic powder, and paprika. Spread into an even layer and roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.

  3. While the sweet potatoes roast, heat a skillet over medium heat. Add the ground beef and break it apart with a spatula as it cooks. Season with salt, pepper, garlic powder, paprika, and mustard. Cook until browned and fully cooked through, about 6–8 minutes.

  4. Divide the chopped lettuce between bowls. Top with roasted sweet potatoes and the cooked ground beef.

  5. Add the tomatoes, red onion, pickles, banana peppers, and microgreens.

  6. Drizzle the special sauce over the top and serve. Toss everything together so the sauce coats the beef and veggies, or eat layered as is. ENJOY!
