Chicken parmesan
Chicken parm, but make it balanced - Aka crispy cutlets, marinara, melty cheese PLUS roasted broccoli and a fresh side salad. Your favorite meals can be both nourishing and enjoyable.
WHAT TO GRAB:
Organic chicken breast cutlets (about 1 lb)
1 egg
Seasoned breadcrumbs (enough to cover - prob ½ -1 cup ish)
Marinara sauce (I love Rao's)
Shredded mozzarella
Optional sides:
1 head broccoli, chopped
Olive oil, garlic powder, salt + pepper
Mixed greens, cucumber, tomato, red onion (for salad)
WHAT TO DO:
Preheat oven to 400°F.
Dip chicken cutlets in egg wash, then coat with breadcrumbs.
Lay coated cutlets in a baking dish. Top with marinara and sprinkle cheese.
Bake for ~20-25 minutes or until the chicken is fully cooked.
For the sides:
Roast broccoli with olive oil, garlic powder, salt, and pepper for 20 minutes.
Toss together salad ingredients with a light dressing of choice (I do olive oil / lemon).
