Greek Chickpea Pasta Salad
*for 4 servings
WHAT TO GRAB:
1 box chickpea pasta, cooked per package instructions
1 bag or arugula (~4-5 cups)
2 tomatoes, sliced
2 cucumbers, sliced
1/4 small red onion, sliced
1/4 cup of Kalmata olives
1/4 cup feta, crumbled
Dressing: olive oil, balsamic, lemon juice, dried oregano, salt and pepper to taste
WHAT TO DO:
Mix together pasta, arugula, tomatoes, cucumbers and onion in a large bowl
On the side, make dressing w/ olive oil, balsamic, lemon juice, dried oregano, salt and pepper to taste
Pour dressing on salad and mix well
Top with feta
