Greek Chickpea Pasta Salad 

*for 4 servings

WHAT TO GRAB:

  • 1 box chickpea pasta, cooked per package instructions

  • 1 bag or arugula (~4-5 cups)

  • 2 tomatoes, sliced

  • 2 cucumbers, sliced

  • 1/4 small red onion, sliced

  • 1/4 cup of Kalmata olives

  • 1/4 cup feta, crumbled

  • Dressing: olive oil, balsamic, lemon juice, dried oregano, salt and pepper to taste

WHAT TO DO:

  1. Mix together pasta, arugula, tomatoes, cucumbers and onion in a large bowl

  2. On the side, make dressing w/ olive oil, balsamic, lemon juice, dried oregano, salt and pepper to taste

  3. Pour dressing on salad and mix well

  4. Top with feta

  5. ENJOY :)
