Cobb Salad

This is not your typical sad salad. This is a balanced, satisfying meal with protein, healthy fats, and fiber — aka the kind of dinner that actually holds you over.

WHAT TO GRAB:

  • For the chicken:

    • Thin-cut chicken breast (I marinated mine in Dijon mustard, lemon juice, olive oil, garlic powder, salt, and pepper), can use rotisserie chicken for a shortcut!

  • For the salad:

    • Romaine lettuce, chopped

    • Hard boiled eggs, chopped

    • Organic turkey bacon, chopped

    • Hearts of palm, sliced

    • Tomatoes, diced 

    • Red onion, thinly sliced

    • Feta cheese, crumbled

    • Ranch dressing of choice (I use primal kitchen) 

WHAT TO DO:

  1. Cook the marinated chicken in a pan over medium heat (or bake at 400°F) until fully cooked. Let it rest, then slice.

  2. While that cooks, cook the turkey bacon until crispy, then chop or crumble.

  3. In a large bowl, add romaine, tomatoes, red onion, and hearts of palm.

  4. Top with sliced chicken, hard boiled eggs, turkey bacon, and feta cheese.

  5. Drizzle with your favorite ranch dressing and toss if desired.
