Cottage Cheese Spaghetti Squash 

*for 2 servings

WHAT TO GRAB:

  • 1 spaghetti squash, cut in half and cooked

  • 1 cup marinara sauce

  • 1 cup cottage cheese

  • Salt, pepper, oregano, basil & garlic powder to taste

WHAT TO DO:

  1. Cook the spaghetti squash however you wish (I poke holes in the skin and place in microwave for a few minutes to make it easier to cut. Then scoop out seeds and roast face down at 425 until done).

  2. Once cooked, let the squash cool for a few moments. Then begin to fork the squash so it becomes “spaghetti” like.

  3. Keep spaghetti squash in its original “boat” and top each half with 1/2 cup of marinara and 1/2 cup of cottage cheese.

  4. Add seasonings to preference (bonus points if you have fresh basil, but dried works well too).
