Everyday Egg Salad

WHAT TO GRAB:

  • 2 organic pasture raised eggs

  • 1/2 small avocado

  • 1 tsp dijon mustard (amount depends on preference)

  • Salt, pepper, chili flakes to taste

WHAT TO DO:

  1. Place a pot with water on the stove. Drop in 2 eggs. Place heat on high and boil eggs for 15 minutes

  2. Let eggs cool and peel off shell

  3. In a bowl, combine eggs, avocado and dijon mustard. Use a fork to mash together

  4. Season with salt, pepper & chili flakes

  5. Eat on a bed of greens or a high fiber bread & ENJOY
