High Protein Cauliflower Mac & Cheese

A cozy, high-protein mac and cheese that sneaks in a veggie — no extra steps, just creamy comfort food that actually loves you back.

WHAT TO GRAB:

  • 1 10z box of pasta (I prefer a legume based pasta to boost the protein / fiber content)

  • ½ cup full-fat cottage cheese

  • 3/4 cup milk of choice

  • ⅔ cup shredded cheese (sharp cheddar works great), extra if you want to sprinkle on top

  • 1 cup thawed frozen riced cauliflower

  • 1 tbsp corn starch powder

  • ½ tsp garlic powder

  • Salt and pepper, to taste

WHAT TO DO:

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and set aside.

  2. Add the cottage cheese, milk, shredded cheese, thawed cauliflower, corn starch, garlic powder, salt, and pepper to a blender. Blend until smooth and creamy.

  3. Pour the sauce into a saucepan over medium heat and stir for 4–5 minutes, until thickened and glossy. Add the cooked pasta and stir until evenly coated.

  4. For a golden finish, top with extra cheese and broil for 2–3 minutes until bubbly and slightly crisp.
