Honey Dijon Salmon Bites
A high protein dinner that is ready in minutes. I love serving these with greens, cucumbers, rice, edamame, kimchi & avocado for a perfectly balanced meal.
WHAT TO GRAB:
2-3 servings
1 lb wild-caught salmon, cut into bite-sized cubes
2 tbsp Dijon mustard
2 tbsp honey
½ tbsp olive oil
1 tsp garlic powder
½ tsp paprika
Salt and freshly ground black pepper, to taste
WHAT TO DO:
Set the oven to 400F
In a large bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, and paprika until smooth.
Set aside half of the marinade in a small bowl (this can be your dipping sauce or drizzle for serving)
Pat the salmon dry with paper towels, then season with salt and pepper. Add the salmon pieces to the large bowl with the remaining marinade and toss gently to coat evenly.
Arrange the salmon cubes in a single layer on a baking sheet (can use parchment to present sticking). Bake for 7–10 minutes, or until the salmon is your desired doneness and flakes easily with a fork.
Enjoy them over rice, tossed into a salad, or paired with roasted vegetables.
