Mashed White Bean Salad

WHAT TO GRAB:

  • 1 can of white beans

  • 1.5 tbsps olive oil

  • 1 tsp dijon mustard

  • 1 lemon (juice and zest)

  • Salt and pepper to taste

Optional: scallions and dill

WHAT TO DO

1. Drain and rinse a can of white beans

2. Mash very roughly with a fork (want it to be chunky, not mashed)

3. On the side, mix olive oil, dijon, lemon juice, lemon zest, salt and pepper

4. Top with chopped scallion and fresh dill for more flavor

5. Can serve over a bed of greens or sandwich style in red pepper cups as pictured

6. Enjoy :)
