Pasta alla Norma

WHAT TO GRAB:

  • Eggplant

  • Avocado oil

  • Garlic powder

  • Salt/pepper

  • Pasta of choice (I used mung bean in the picture)

  • Fresh arugula

  • Jarred marinara sauce

  • Parmesan

  • Fresh basil

WHAT TO DO:

  • Set oven to 425 F

  • Cut eggplant into bite sized cubes and rub with avocado oil, garlic powder, salt/pepper. Place on a baking sheet and roast at 425 until crispy (~25 mins). Shake pieces halfway through so that all ends are crispy.

  • While eggplant is halfway done cooking, make pasta according to package instructions.

  • In a large bowl, add fresh arugula, cooked pasta & baked eggplant.

  • Top with marinara sauce, parmesan and fresh basil. Add extra salt/pepper to taste.

  • ENJOY!
