Pasta alla Norma
WHAT TO GRAB:
Eggplant
Avocado oil
Garlic powder
Salt/pepper
Pasta of choice (I used mung bean in the picture)
Fresh arugula
Jarred marinara sauce
Parmesan
Fresh basil
WHAT TO DO:
Set oven to 425 F
Cut eggplant into bite sized cubes and rub with avocado oil, garlic powder, salt/pepper. Place on a baking sheet and roast at 425 until crispy (~25 mins). Shake pieces halfway through so that all ends are crispy.
While eggplant is halfway done cooking, make pasta according to package instructions.
In a large bowl, add fresh arugula, cooked pasta & baked eggplant.
Top with marinara sauce, parmesan and fresh basil. Add extra salt/pepper to taste.
