Pistachio Feta Carrots

No boring vegetable sides around here. The richness of the pistachios and feta along with the brightness from the mint make this a restaurant quality side dish.

What to grab

  • Carrots

  • Olive oil or avocado oil

  • Garlic powder

  • Salt

  • Black pepper

  • Crumbled feta

  • Shelled pistachios

  • Chopped mint leaves

  • Chopped parsley leaves

What to do

  1. Set the oven to 425F

  2. Rub carrots with oil, garlic powder, salt and pepper

  3. Roast the carrots in the oven until fork tender (will depend on thickness of carrots, between 25-35 minutes typically)

  4. Once the carrots are done, take them out of the oven and let cool for ~1-2 minutes

  5. Once carrots are slightly cooled, top with feta, pistachios, mint and parsley

  6. Enjoy :)
