Protein Avocado Toast

WHAT TO GRAB:

  • 1/2 an avocado

  • 1/2 a cup of edamame

  • 1-2 pieces of toast

  • Salt

  • Pepper

  • Garlic Powder

  • 1/2 of a lime

  • Microgreens (Optional)

WHAT TO DO:

1. Add 1/2 a cup of edamame and 1/2 an avocado to a blender or food processor.

2. Season with lots of salt/pepper, garlic powder & juice of half a lime.

3. Pulse a few times to break up the edamame (a few chunks in there are fine!), then mix with a fork to bring it all together.

3. Scoop and spread onto piece of toast/ pieces of toast and top it with some microgreens. Enjoy!
