Chickpea Scallion Pancakes
Kinda like your favorite Chinese food side, minus the grease, plus fiber and protein from chickpeas. WIN.
WHAT TO GRAB:
serves 1
1/4 cup chickpea flour
1/4 cup water
1 scallion, chopped
salt and pepper to taste
Optional:
chopped dill
ricotta (can use plant based one, as seen in my image) or Greek yogurt for topping
WHAT TO DO:
Mix water and chickpea flour, should be pancake consistency
Add in the white and light green parts of the scallion
Cook like a pancake
Once done, garnish with the bright green parts of the scallions. Option to serve with ricotta or greek yogurt and some dill for extra flavor
