Chickpea Scallion Pancakes

Kinda like your favorite Chinese food side, minus the grease, plus fiber and protein from chickpeas. WIN.

WHAT TO GRAB:

serves 1

-1/4 cup chickpea flour

-1/4 cup water

-1 scallion, chopped

-salt and pepper to taste

Optional:

-chopped dill

-ricotta (can use plant based one, as seen in my image) or Greek yogurt for topping

WHAT TO DO:

  1. Mix water and chickpea flour, should be pancake consistency

  2. Add in the white and light green parts of the scallion

  3. Cook like a pancake

  4. Once done, garnish with the bright green parts of the scallions. Option to serve with ricotta or greek yogurt and some dill for extra flavor

  5. ENJOY
