Ultimate Summer Salad
This is the kind of salad you'll make on repeat all summer. Fresh, colorful, and packed with flavor. It pairs perfectly with grilled chicken, salmon, steak, or even chickpeas for a simple meal.
WHAT TO GRAB:
2 ears corn, boiled and kernels cut off
1 large zucchini, chopped
2 heirloom tomatoes, chopped
1/4 red onion, finely chopped
2 nectarines, chopped (can sub peaches)
2 cups arugula
2–3 tbsp pesto
Juice of 1 lemon
Salt & freshly cracked black pepper, to taste
Optional: Crumbled feta cheese
WHAT TO DO:
Bring a pot of salted water to a boil and cook the corn for about 5–7 minutes. Let cool slightly, then slice the kernels off the cob.
Chop the zucchini, tomatoes, red onion & nectarines.
In a large bowl, combine the corn, zucchini, tomatoes, red onion, nectarines and arugula.
Add the pesto and lemon juice, then toss until everything is evenly coated.
Season generously with salt and pepper.
Top with crumbled feta, if using, and serve immediately.
