Veggie Chickpea Lasagna

WHAT TO GRAB:

-1 box Banza lasagna

-1 jar of marinara sauce (24 oz)

-Ricotta cheese (approx 1.5 cups or 12oz)

-Parmesan cheese (approx 1/3 cup)

-Mozzarella cheese (1 cup)

-Italian seasoning (dried basil, oregano, thyme)

-Mushrooms, chopped

-Spinach, chopped

-Optional: Fresh basil and Italian parsley (chopped) to top 

WHAT TO DO:

1. Preheat oven to 350F

2. Layer some of marinara sauce on bottom of baking dish. Add enough so that first layer of pasta can lay in it.

3. Add 1 layer of lasagna sheets (amount will vary depending on pan size).

4. Add a layer of ricotta on top of lasagna. Spread evenly. Add chopped mushroom and spinach. Sprinkle w/ parmesan and Italian seasonings. Add a layer of marinara. 

5. Add another layer of lasagna sheets and repeat steps 3-4 until finished.

6. Add layer of marinara on top of last layer. Cover with mozzarella cheese.

7. Bake in oven at 350 for 45 minutes covered w/ tinfoil. Take off tinfoil and bake for another 10 minutes. 

8. Top w/ fresh basil/parsley and enjoy!
