Zucchini Pancakes
WHAT TO GRAB:
~1 cup spiralized (or shredded) zucchini (about 1 small zucchini)
2 tbsp flour (whole wheat, almond, coconut, whatever you’d like)
1 egg, beaten
1/2 tsp baking powder
Salt, pepper, garlic powder to taste
Avocado oil to cook
Optional toppings:
Plain Greek yogurt
Scallions
Applesauce
WHAT TO DO:
Make sure to remove as much water from the zucchini as possible (a cheesecloth works best, if you don’t have one, try a dishtowel)
Combine spiraled zucchini, almond flour, egg, baking powder and salt/pepper/garlic powder
Heat a small amount of oil in a large pan (spray works too, just make sure the pan is covered)
Drop small amounts of zucchini mixture onto the hot pan (keep at about medium-high heat)
Cook until golden
